Ashley Billington

I’m Ashley Billington, co-founder of Billington Mushroom Farms, a vertical farming operation producing premium gourmet and functional mushrooms for leading restaurants and wholesalers across Sussex and beyond. We grow sustainably in a controlled environment, ensuring consistently fresh, high-quality native varieties such as native oysters, native coral tooth, native lion’s mane, and many others.
We enjoy supporting local food communities and would be pleased to contribute produce to member events. I value the ethos of Table Talk Business Club and Prept. Foundation, and I’d welcome the opportunity to connect and collaborate with like-minded hospitality professionals.
