Renowned Chef Rafael Cagali, and his partner, Charlie Lee, of two-Michelin-starred Da Terra and Bethnal Green Town Hall’s Elis, launched their newest culinary venture, Maré by Rafael Cagali, in Hove. Within four months, they had earned another Michelin star, the first in Brighton and Hove for nearly 50 years.
Maré translates to ‘tide’ in Portuguese, chosen to reflect the menu’s response to the seasons – much like the rhythmic ebb and flow of the waves. Dishes are thoughtfully crafted to reflect seasonal ingredients and are greatly inspired by the East Sussex locale.
Cagali’s protégé, Ewan Waller, leads the kitchen daily as Head Chef. The menu is structured as: small bites, hot and cold small plates, mains, sharers, and desserts.
